{"id":1515,"date":"2021-03-27T17:21:42","date_gmt":"2021-03-27T17:21:42","guid":{"rendered":"https:\/\/www.enricocecilian.com\/?page_id=1515"},"modified":"2022-01-23T07:38:38","modified_gmt":"2022-01-23T07:38:38","slug":"my-philosophy","status":"publish","type":"page","link":"https:\/\/www.enricocecilian.com\/eng\/my-philosophy\/","title":{"rendered":"My Philosophy"},"content":{"rendered":"<div class=\"wp-block-column\">\n<p>My culinary&nbsp; philosophy has grown out of my work&nbsp; experience, which allowed me to revisit the Italian gastronomic tradition so as to adapt and revitalize it with inventive aesthetic values from Danish new cuisine.<br \/>\nRevisiting a tradition allows one&nbsp;<strong>to enhance it with innovative techniques in order to create a recipe<\/strong>&nbsp;in a way that allows for variation and diversity.<br \/>\nFor my part,&nbsp;<strong>I bring together contrasting colours, aromas and flavours<\/strong>&nbsp;to enhance the &#8220;character&#8221; of a recipe in a balance of quality, consistency and colours.<br \/>\nA chef should be a &#8220;manipulator&#8221;, able to&nbsp;<strong>transform ingredients while respecting their true nature<\/strong>. In gastronomy, transformation must bring out the quality of the ingredients.<br \/>\nI want the diner to &#8220;taste&#8221; my passion for my profession, my personality, my experience, my art.
